Microplane graters work extraordinarily well because holes in their surgical-grade, 18/8 stainless-steel blades are photo-etched (dissolved with a chemical) rather than punched. The result is razorlike edges that minutely slice food instead of tearing or shredding it, creating the fluffiest piles of citrus zest, cheese, coconut, or ginger imaginable without clogging the blades and with relatively little effort. This Microplane system comprises two blades--one for fine grating, the other for coarse--that snap in and out of a single frame with a handle, saving space in the drawer. The fine blade is ideal for citrus zest, hard cheese, nuts, ginger, garlic, and nutmeg. The coarse blade is ideal for chocolate and coconut as well as hard and semihard cheese, ginger, and garlic. The rugged synthetic handle fits snugly in the hand and the frame and blades go safely in the dishwasher. Each blade measures 4-1/4 by 2 inches.
