The inside is black, textured, satin-finish enamel so food clings to its broad, deeply curved sides and the interior stands up durably to utensil abuse. The wok wont heat up as quickly as modern steel woks. Once heated, however, it displays the advantage of cast iron--unexcelled heat distribution and retention--that for centuries allowed the wok to suffice as the sole cooking vessel in Chinese kitchens.
