With an exterior of hard, blue porcelain-enamel and an interior of nonstick with a granite-like finish, this moderately priced 12-1/2-inch sauté pan resists scratches outside and inside. The manufacturer, in fact, says that you can use metal utensils in the pan and that it is dishwasher-safe; however, this would inevitably reduce the pans useful life so it is probably better suited for novice and occasional cooks. A small copper disk in the bottom of the exterior activates a red spot in the bottom of the interior, which becomes solid red when the deep, round-sided pan is properly preheated for sautéing or stir-frying. The pans synthetic handle has a stylish nickel insert, stays cool on the stovetop, and is oven-safe to 350 degrees F for pan-roasting.
