The broad, slightly curved, 9-inch serrated blade on this knife is perfect for cracking though the crusts of big country-style loaves of bread. Its serrations are large enough to qualify, in knife-speak, as scallops, providing points to easily penetrate a hard crust for quick slicing. Like other Henckels Five Star knives, this bread knife has a distinctive handle molded from black polypropylene like a gentle wave to fit the hand snugly, though small-handed cooks might find it a bit thick and long. Its tang is rat-tail shaped rather than full, but the knife is strong and nicely balanced. Like other top-grade Henckels knives, Five Star series blades are formed by a high-tech welding process combining three high-carbon stainless-steel types into what appears to be a single piece so a knifes parts have the distinct characteristic ideal for each. Traditionalists insist on single-piece forging, but Henckels says the invisible welds are stronger than the steel itself.
