Consisting of seven kitchen knives, eight 4-1/2-inch steak knives, kitchen shears, a sharpening steel, and a heavy wood block with two extra slots, this set places nearly every essential cutting edge on a counter within reach. The kitchen knives are an 8-inch chefs, a 6-inch wide-blade chefs, an 8-inch bread, a 3-inch paring, an 8-inch carving, a 5-inch serrated utility, and a 6-inch utility. Except for the paring and utility knives in this set, the blades and bolsters of Henckelss first-rate cutlery lines are formed by a high-tech welding process that combines three high-carbon, stainless-steel types into what appears to be a single piece. The result is that each part of a knife has the optimum amount of steel required for the best performance. Henckels says the invisible welds are stronger than the steel.
