The 8-inch blade on this knife features a curved back and a straight, scalloped edge. The serrated edge penetrates resistant crusts, slicing evenly through even hard loaves of bread without crushing the delicate interior. The knife is also well suited for slicing tough, fibrous fruits, such as pineapples. Serrated-edge blades cannot easily be resharpened, but because the primary cutting surfaces are in the curved part of the scalloped edges, they tend to hold their cutting abilities quite well. Most of the Henckels lines--including the popular Four Star series--feature blades made of Friodur, a special, ice-hardened, no-stain steel created and patented by the company in 1939.
