Pure carbon steel sharpens to a finer edge than stainless steel, and for traditionalists who insist on performance rather than looks, Sabatier is one of the few knife makers left still producing these traditional blades. This carving knifes thin, narrow, 12-inch blade neatly slices the biggest roast beefs, hams, and turkeys. Forged from a single piece of steel, the knife has a bolster for strength and balance and a full tang, with tough polypropylene grips brass-riveted to the tang in classic style.
