An excellent knife maker, Sabatier is one of the few companies left that still make a line of pure carbon steel blades--they take a sharp edge better than any other material. For many chefs, this sharp edge more than makes up for minor discolorations that occur with age. The extremely flexible blade on this filet knife makes it an excellent choice for working with fish or other delicate meats that need to be deboned or sliced thinly. Its also great for working around fruit cores and for various vegetable slicing and peeling tasks.
