The Laguiole knife originated in 1829 in a French mountain village of the same name. Back then, farmers folded it into their pocket. Today, Laguiole steak knives are made in Thiers, the French cutlery center, according to the original design--except they dont f´old. Long (9-1/8 inches overall, with 4-1/2-inch blades) and slender, these knives impart a whiff of ornate chateau manners and crystal chandeliers. Bonelike handles are elongated "pistol grips" like those on dueling weapons. Five tiny brass rivets bind them to full tangs. Brass caps decorate handle ends. Tiny steel bees sit atop brass bolsters, homage to a bee on Napoleons Imperial emblem, awarded to him for bravery. Blades are finely serrated.
