This is an excellent-quality bread knife. The 8-inch blade tackles the crustiest of sourdoughs with nary a flinch. Theres a slight flexibility to the blade, which is great for sliding through a loafs fluffy interior without tearing. With the deep angle of serration, its great for lefties as well, and maintains a sharp edge for a long while. Its also useful for vegetables such as tomatoes or eggplant; youll get nice slices without squashing all the juice out. The handle is smooth and comfortable, providing a wonderful balance thats a big help when slicing through chewy bagels.
